She is Kanti. Together with Nyoman and Made, she manages the processing of coconut oil , which was born as an international production project in Indonesia .Β from the virtuous collaboration between a university company from the Scuola Superiore Sant'Anna in Pisa and a local farming community on the island.
"It is Bali that offers us the precious palm trees from which we hand-pick the coconuts and then cold-press their fresh pulp .
The production site is located in a remote area of ββthe island, where plant species grow spontaneously in fertile land that we have been committed to protecting and supporting for years by combating intensive cultivation .
The first time we visited the farming community and met Kanti, in 2015, we fell in love with every corner of this enchanting jungle garden and embraced the care and passion with which people live and work here, in harmony with the biological rhythms of nature .
The same Coccoon coconut oil and the fruits from the garden feed the entire community, which lives thanks to a clean, waste-free circular economy of which we are an integral part.
We deliberately do not disclose the exact location of this earthly paradise because we protect it. From the first day of this virtuous collaboration, we promised to directly care for, without the interference of dangerous intermediaries , the fair and linear production chain we built from scratch, starting from the valuable local connections of the International Doctoral Program in Agrobiodiversity at the Scuola Superiore Sant'Anna , of which our project has been a university spinoff since June 2015.
Attention to the environment and the valorization of human resources are a vital principle on which our entire production process is based: from Bali together with Kanti, Nyoman and Made, up to Italy where we formulate all the finished products and where the pure oil is packaged ."
